I'm a RD, And Here's Why Everyone Should be Eating More Tofu
If there’s one thing I’ve learned in my four years of being a vegan, it’s this: There are two types of people—tofu lovers and tofu haters. You can count me in the first group, but I’ve been asked time and time again by skeptics, “Is tofu good for you?” Tofu haters tend to have a few qualms with the plant-based protein. Either they avoid it due to its unique texture, or they have specific health concerns.

Why Tofu Might Not Be as Healthy as You Think
Tofu is made from coagulated soy milk, not whole soybeans. This means that it’s missing a lot of the nutritional benefits of soy, including most of its natural fiber (a half cup of firm tofu typically only has one gram of dietary fiber). This means that even though there is quite a bit of protein in tofu, it’s difficult for our bodies to digest it.

Aside from being a packaged product, tofu is also a processed food in the sense that it typically involves rendering soy milk from soybeans and water and then coagulating it to separate the curds and whey. Is tofu healthy? Yes, says Harvard Chan expert
Tofu—a product containing soybeans, water, and a coagulant such as calcium sulfate, that is pressed into a block—is a great source of protein and nutrients, said Sun. But tofu and other soy products, which are a primary source of isoflavones, “do not have a consistent positive image in the United States,” he acknowledged. That’s because isoflavones function like a weak form of the hormone estrogen, and concerns have arisen that soy can cause infertility or other problems in men. But Sun said there’s no scientific basis for the concerns.

Tofu 101: The Health Benefits of Tofu - and How to Cook It
Tofu is processed soybean curd. If that sounds weird, it’s not that different than cheese…let me explain! The three ingredients behind tofu are soybeans, water and a coagulant—usually nigari (magnesium chloride) or gypsum (calcium sulfate). For all the science geeks out there, a coagulant is a substance that allows fluid to curdle to become a solid. The whole process of making tofu is very similar to cheese making; if you’ve ever made ricotta at home, you know that you add a coagulant (lemon juice) to milk and then separate the casein curds from the liquid whey.
When You Eat Tofu Every Day, This Is What Happens To Your Body
Should you eat tofu every day? Well, tofu is definitely high on the list of foods that are polarizing, likely because of its bland flavor and soft texture. But tofu enthusiasts are quick to point out that it's all about how you prepare the tofu, which takes on the flavor of anything you season it with.
