Grilling meats is an American tradition, but it’s not the healthiest thing to do. A growing body of research suggests that cooking meats over a flame is linked to cancer. Combusting wood, gas, or charcoal emits chemicals known as polycyclic aromatic hydrocarbons. Exposure to these so-called PAHs is known to cause skin, liver, stomach, and several other types of cancer in lab animals. Epidemiological studies link occupational exposure to PAHs to cancer in humans. When PAHs from a flame mingle with nitrogen, say from a slab of meat, they can form nitrated PAHs, or NPAHs. One bacterial species called Helicobacter pylori has long been accepted to cause stomach cancer, but its link to colorectal cancer is uncertain, although there is growing evidence to suggest it is involved in some cases. There is also much interest in bacteria found in normal gut microbiome that are not currently thought to have any role in disease.
Can Antibiotics Prevent Deaths From Stomach Cancer?
While the numbers from the Cochrane report are clear, and in some ways dramatic – demonstrating a risk reduction of 34 percent in people treated for H. pylori – the low proportion of the nearly 6500 study participants who developed gastric cancer in these combined studies was low: only 2.4 percent in the untreated group. This means that number needed to treat in a population, or NNT, would be large relative to the number of gastric cancers prevented and deaths (if any) reduced. Yet the potential for cutting the incidence of this malignancy by a third or half, and lessening other illness caused by h. pylori, is not trivial.
Heartburn Drugs Tied to Stomach Cancer Risk
People who carry the stomach bacteria known as Helicobacter pylori are at increased risk for ulcers and stomach cancer. But even when antibiotic treatment has eliminated the bacterium, stomach cancer may still arise. A new study suggests that one reason may be the long-term use of proton pump inhibitors, or P.P.I.s, acid-reducing medicines sold under brand names such as Prilosec and Prevacid.
Salt: Shaking up the link with stomach cancer
Scientists believe the increased stomach cancer risk from salt-preserved foods is because they contain a large amount of salt, which infuses the foods during the preservation process. Experimental research has shown that salt damages the stomach lining and causes lesions, which, if left to develop, can become stomach cancer. Importantly, infection with Helicobacter pylori bacteria also damages the stomach lining, and is made worse in the presence of salt. Helicobacter pylori infection is relatively common in parts of Asia and is also an independent cause of stomach cancer.
Scientists are working on a breath test to diagnose stomach cancer
A new technology that analyzes exhaled breath could one day diagnose stomach cancer in a matter of minutes. The test interprets patients’ "breath prints" — unique patterns of molecules that we breathe in and out everyday and reflect conditions in the body. Similar tests have already been developed to detect other types of cancer, but scientists say the method is especially important for stomach or gastric cancer because of the disease’s relatively low profile in the West.
